Having difficulties making thin cuts on your roasts or meat with your kitchen knives? You probably need to add a carving knife to your kitchen knife set. Unlike paring knives or modeling knives, carving knives are large knives commonly used to make thin cuts of meat.
If you have been to a rotisserie, you probably would have seen one used by the chef there. The carving knife is good for cutting thin and precise slices of white and red meats such as ham, poultry, roast, or any large slab of cooked meat, therefore it is sometimes called a slicing knife as well.
Why Carving Knives Carve and Slice Well
Carving knives are usually thinner at their spine. This is to ensure that you can make precise cuts without having to push the slab of meat sideways too much. Carving knives are designed to minimize the pushing or pressing motion on meat which cause uneven cuts and bad texture. For that reason carving knives usually require frequent maintenance as they have to be at their prime sharpness when cutting to make sure that they are not “pushing” or “pressing” on the meat.
Nowadays, carving knives come in the electric-powered version too. The electric carving knives are faster and require less skill to use, but they also need more care in handling and may be dangerous if mishandled. I still prefer the manual ones as they’re often longer and carve large roasts well. Also, I’m experienced in carving.
